Caesar Salad with a Twist

I’m a huge fan of a traditional Grilled Chicken Caesar salad. However, on my meatless journey I can still enjoy some of my delicious favs by replacing proteins. Above is a Kale Caesar salad with roasted chic peas. Roasting chic peas in super simple. Toss them in a bowl with olive oil, salt and pepper. Spread on a foil lined baking sheet and roast in the over on 400 for about 20-25 minutes. If you’re into flavor, add some chili powder, garlic powder or other seasoning to your liking. This is definitely what I’m having for lunch today.
