Summer Casserole

I saw this recipe on Pinterest, altered it and added shrimp. May I present to you my Zucchini Squash and Corn Casserole. With all this rain Jersey has been having, I’ve been in the mood for cozy food. The hardest part of this recipe is chopping the veggies. Other than that it is super simple and super delicious! Below is the full recipe. Enjoy!

2 large zucchini

3 small yellow squash

1 large yellow onion

2 garlic cloves

2 cups canned corn

1/2 cup mayo

1/2 cup sour cream

1/2 cup parmesan cheese

1 8oz. Package of white cheddar cheese

1 cup bread crumbs

1/2 tsp salt

1 tsp pepper

2 eggs

Oil for coating baking dish

Preheat oven at 350. Chop all veggies and put in a large bowl. Mix is all other ingredients. I used my hands for the mixing. Coat a 9×13 baking dish. Pour mixture in and bake for 50 minutes.

Adding the shrimp is completely optional. If interested I used old bay seasoning and 1/2 of a lemon to season the shrimp. I cooked them on medium and added them on top of the dish.
